To make Spicy Peach Honey Syrup, mix 2 parts Spicy Peach Honey with 1 part water. Mix over low heat until combined, do not bring to boil. Set aside and let cool.
Add mint leaves, Spicy Peach Honey Syrup, bourbon, and ice into a shaker. Shake for 5-10 seconds. Double strain into a chilled rocks glass. Pack the glass tightly with crushed ice and create ice dome. Garnish with mint sprig. Enjoy!
